Ingredients
– 1 kg pork hocks
– 1 cup mung beans
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 1 tablespoon ginger, grated
– 2 carrots, sliced
– 1 cup water
– 100 ml soy sauce
– 1 cup sotanghon noodles
– Salt and pepper to taste
Method
1. Start by soaking the mung beans in water for about 30 minutes.
2. Place the pork hocks in a large pot. Add the chopped onion, garlic, and ginger. Pour in the soy sauce and water.
3. Bring everything to a boil, then reduce the heat. Simmer for about 1 hour or until the pork is tender.
4. Add the soaked mung beans and sliced carrots to the pot. Cook for another 20 minutes. Season with salt and pepper to taste.
5. Finally, add the sotanghon noodles. Cook for an additional 10 minutes until the noodles are soft.
