Ingredients
400g cooked pork, shredded
1 medium onion, finely chopped
1 clove garlic, minced
100g breadcrumbs
2 large eggs
1 cup fresh parsley, chopped
1 tsp Dijon mustard
Salt and pepper, to taste
500ml vegetable oil, for frying
1 cup mayonnaise
Method
1. Heat a pan over medium heat and add some oil. Sauté the onion and garlic until softened.
2. In a large bowl, combine the shredded pork, sautéed onion, breadcrumbs, eggs, parsley, mustard, salt, and pepper. Mix well until everything is combined.
3. Shape the mixture into small balls or patties.
4. Heat the vegetable oil in a large pot over medium heat. Fry the croquettes in batches until golden brown and cooked through. Drain on paper towels.
5. Serve the croquettes with mayonnaise on the side.
