Ingredients
– 200g pistachios, shelled
– 250g mascarpone cheese
– 300ml heavy cream
– 100g sugar
– 75ml milk
– 1 teaspoon vanilla extract
– 1 packet of sponge cake mix
– 3 large eggs
– 50g unsalted butter, melted
– Extra pistachios for decoration
Method
1. Preheat the oven to 180°C. Prepare two cake pans by greasing them.
2. Mix the sponge cake mix, eggs, melted butter, and milk in a bowl until smooth. Pour the batter evenly into the prepared pans.
3. Bake the cakes for about 25 minutes or until a toothpick comes out clean. Let them cool completely.
4. Beat the heavy cream, mascarpone cheese, sugar, and vanilla extract in a bowl until the mixture forms soft peaks.
5. Layer the cooled cakes with the cream mixture and chopped pistachios. Decorate with extra pistachios on top.
