Pineapple Coconut Loaf Cake: A Tropical Delight Recipe

Ingredients

– 1 cup all-purpose flour
– 1 cup sugar
– 1/2 cup unsweetened shredded coconut
– 1/2 cup crushed pineapple, drained
– 1/2 cup butter, softened
– 2 large eggs
– 1 teaspoon baking powder
– 1 teaspoon vanilla extract
– 1/2 teaspoon salt
– 1/4 cup milk

Method

1. Preheat the oven to 175 degrees Celsius. Grease a loaf pan.
2. In a large bowl, cream the butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the pineapple, coconut, vanilla, milk, flour, baking powder, and salt until well combined.
5. Pour the mixture into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
