Ingredients
- 1 tablespoon of olive oil
- 500 grams of chicken breast, diced
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 400 grams of diced tomatoes (canned)
- 1 teaspoon of dried oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 cups of cooked rice
Method
- Heat the olive oil in a large pan over medium heat.
- Add the diced chicken and cook until no longer pink.
- Stir in chopped onion, garlic, and bell pepper; sauté until softened.
- Pour in the diced tomatoes, oregano, salt, and black pepper, mixing well. Simmer for 10 minutes.
- Serve the chicken mixture over cooked rice.
