Ingredients

– 1 whole duck (about 2 kg)
– 60 ml soy sauce
– 60 ml honey
– 30 ml olive oil
– 2 teaspoons five-spice powder
– 1 teaspoon black pepper
– 1 lemon (juiced)
– 1 garlic clove (minced)
– Wood chips (for smoking)
– Salt (to taste)

Method

1. Start by cleaning the duck and removing any excess fat. Pat it dry with some paper towels.
2. Mix soy sauce, honey, olive oil, five-spice powder, black pepper, lemon juice, garlic, and salt in a bowl. This will be your marinade.
3. Rub the marinade all over the duck, making sure to get under the skin. Let it marinate in the fridge for at least 4 hours or overnight for the best flavor.
4. Prepare your kettle grill by adding soaked wood chips to a side tray. Preheat the grill to medium heat around 180°C.
5. Place the duck on the grill bone side down, cover, and smoke for about 1.5 to 2 hours or until the internal temperature reaches 74°C.
