Ingredients
– 1 kg beef tenderloin
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 2 teaspoons garlic powder
– 2 teaspoons fresh rosemary, chopped
– 1 teaspoon fresh thyme, chopped
– 1 tablespoon Dijon mustard
– 1 tablespoon balsamic vinegar
– 4 cups mixed vegetables (such as carrots, broccoli, and bell peppers)
Method
1. Preheat the oven to 200°C (400°F).
2. Rub olive oil all over the beef tenderloin.
3. Sprinkle salt, pepper, garlic powder, rosemary, and thyme evenly onto the meat.
4. Spread Dijon mustard on the beef, then drizzle with balsamic vinegar.
5. Place the beef in a roasting pan and add mixed vegetables around it. Roast for about 25-30 minutes for medium-rare.
