Ingredients
600g salmon fillets
1 cup panko breadcrumbs
1/2 cup sliced almonds
1/4 cup flour
2 large eggs
2 tablespoons olive oil
1/4 cup unsalted butter
1 clove garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste
Method
Preheat your oven to 200 degrees Celsius.
Line a baking sheet with parchment paper.
Combine panko, sliced almonds, salt, and pepper in a bowl.
Dredge each salmon fillet in flour, then dip in beaten eggs, and coat with the panko-almond mixture.
Place the fillets on the baking sheet and drizzle with olive oil. Bake for 12-15 minutes until golden brown.
