Ingredients
1. 4 chicken thighs, skin-on
2. Salt and pepper, to taste
3. 1 tablespoon olive oil
4. 1 tablespoon butter
5. 1 lemon, sliced
6. 2 cloves garlic, minced
7. 250 ml chicken broth
8. 2 teaspoons fresh thyme, chopped
Method
1. Start by seasoning the chicken with salt and pepper on both sides.
2. Heat olive oil in a large skillet over medium heat. Add the chicken, skin-side down, and cook until golden brown, about 5 minutes.
3. Flip the chicken and add butter, lemon slices, and minced garlic to the skillet. Cook for another 5 minutes.
4. Pour in the chicken broth and sprinkle thyme over the top. Bring to a simmer, then cover and reduce heat.
5. Cook for 15-20 minutes, until chicken is cooked through. Serve with the pan sauce.
