Ingredients
– 1 lb (450 g) chicken breast, diced
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 2 cups (500 ml) chicken broth
– 2 cups (500 ml) pasta (like penne or fusilli)
– 1 cup (250 ml) cream
– 1 cup (100 g) frozen peas
– 1 teaspoon Italian herbs
– Salt and pepper to taste
Method
1. Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned.
2. Stir in the chopped onion and minced garlic. Cook until the onion becomes translucent.
3. Pour in the chicken broth and bring to a boil. Add the pasta and reduce the heat to a simmer.
4. After about 10 minutes, when pasta is nearly done, mix in the cream, frozen peas, and Italian herbs.
5. Season with salt and pepper, then cook for an additional 3 minutes. Serve warm.
