One-Pot Chicken Thighs With Mushrooms: Easy Dinner Recipe

Ingredients

– 4 chicken thighs
– 250 ml chicken broth
– 200 g mushrooms, sliced
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 1 tsp dried thyme
– 1 tsp paprika
– 2 tbsp olive oil
– Salt and pepper to taste
– Fresh parsley for garnish

Method

1. Heat the olive oil in a large pot over medium heat.
2. Season the chicken thighs with salt, pepper, thyme, and paprika. Place the chicken in the pot and brown each side for about 5 minutes.
3. Remove the chicken from the pot and set it aside. Add the onion and garlic to the pot. Sauté until the onion is soft.
4. Stir in the mushrooms and cook for another 5 minutes. Pour in the chicken broth and bring it to a simmer.
5. Return the chicken to the pot. Cover and cook for 30 minutes, until the chicken is fully cooked. Garnish with parsley before serving.
