Ingredients
– 1.5 kg turkey breast, boneless
– 1 tbsp olive oil
– 2 tsp dried rosemary
– 2 tsp dried thyme
– 2 tsp garlic powder
– 1 tsp salt
– 1/2 tsp pepper
– 4 parsnips, peeled and cut into wedges
– 1 lemon, cut into slices
– 1 cup chicken broth
Method
1. Preheat the oven to 190°C (375°F).
2. In a bowl, mix olive oil, rosemary, thyme, garlic powder, salt, and pepper.
3. Rub the herb mix all over the turkey breast, ensuring it’s evenly coated.
4. Place the turkey in a roasting pan with parsnip wedges, lemon slices, and chicken broth.
5. Roast in the oven for about 60-75 minutes, until the turkey is cooked through and the parsnips are tender.
