Ingredients
– 300 g chorizo sausage, sliced
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 400 g canned diced tomatoes
– 250 ml chicken or vegetable stock
– 300 g spaghetti
– 1 tsp dried oregano
– Salt and pepper to taste
– Fresh basil leaves, for garnish
– Grated cheese, for serving
Method
1. Heat a large pan over medium heat. Add the sliced chorizo and cook for 5 minutes until browned.
2. Stir in the chopped onion and minced garlic. Cook for another 3 minutes until the onion softens.
3. Pour in the canned diced tomatoes, chicken or vegetable stock, and oregano. Mix everything well.
4. Add the spaghetti to the pan, pressing it under the liquid. Bring everything to a boil, then reduce the heat and cover. Simmer for about 10-12 minutes until the pasta is tender.
5. Season with salt and pepper. Serve hot, topped with fresh basil and grated cheese.
