Ingredients
– 2 medium sweet potatoes, peeled and diced
– 1 tablespoon olive oil
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 can black beans, drained and rinsed (400g)
– 1 red bell pepper, chopped
– 1 avocado, diced
– 1 lime, juiced
Method
1. Preheat the oven to 200°C (400°F).
2. In a bowl, mix diced sweet potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
3. Spread sweet potatoes on a baking sheet. Bake for 25 minutes or until golden and tender.
4. Combine baked sweet potatoes, black beans, and red bell pepper in a large bowl. Toss everything together.
5. Top with diced avocado and lime juice just before serving.
