Ingredients
– 1 cup rolled oats
– 1 cup milk
– 1 cup mashed ripe bananas (about 2 large bananas)
– 1/3 cup honey or maple syrup
– 1/2 cup shredded coconut
– 1/2 cup all-purpose flour

– 1/2 teaspoon vanilla extract
Method
1. Preheat the oven to 180 degrees Celsius. Line a muffin tin with paper liners or grease it.
2. In a large bowl, mix rolled oats with milk. Let it sit for about 10 minutes to soften the oats.
3. Add mashed bananas, honey or maple syrup, shredded coconut, brown sugar, and vanilla extract to the softened oats. Stir well.
4. Combine flour, baking powder, and baking soda in a separate bowl. Gradually add this to the wet mixture, stirring until just combined.
5. Divide the batter evenly among the muffin cups. Bake for 20-25 minutes, or until a toothpick comes out clean.
