Nutritious Black Rice And Barley Congee With Flax Seeds Recipe

Ingredients

– 1 cup black rice
– 1/2 cup barley
– 2 tablespoons flax seeds
– 4 cups water
– 1/2 teaspoon salt
– 1/2 teaspoon ginger, grated
– 1/2 onion, chopped
– 2 cloves garlic, minced
– 2 spring onions, chopped
– Optional toppings: vegetables or herbs

Method

1. Rinse the black rice and barley under cold water until the water runs clear.
2. In a large pot, combine the rinsed rice and barley with the water. Bring to a boil and then reduce the heat to a simmer.
3. Add salt, ginger, onion, and garlic to the pot. Stir well and let it cook for about 30 minutes, stirring occasionally.
4. After cooking, check the texture. If it’s too thick, add a bit more water. Adjust salt and add flax seeds, stirring them in.
5. Serve warm with chopped spring onions and any optional toppings you like.
