Ingredients
- 1 cup of dates, pitted
- 1 cup of walnuts
- 1 cup of oats
- 1 cup of cocoa powder
- 1/4 cup of maple syrup
- 1/2 cup of almond milk
- 1 tsp vanilla extract
- 1/4 cup of shredded coconut (optional)
- Pinch of salt
- Extra coconut for topping (if desired)
Method
- Soak the dates in warm water for 10 minutes, then drain them.
- In a food processor, blend the dates, walnuts, oats, cocoa powder, maple syrup, almond milk, vanilla extract, and salt until well mixed.
- Pour the mixture into a cake tin and press it down evenly.
- Sprinkle shredded coconut on top if you want, then refrigerate for at least 2 hours to set.
- Once set, cut the cake into slices and enjoy!
