New York’s Mysterious Restaurant Critic: Meet J. Lee

Ingredients

– 2 cups rice
– 4 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 2 cups mixed vegetables (like carrots and peas)
– 1 teaspoon salt
– 1 teaspoon pepper
– 4 eggs
– Soy sauce to taste

Method

1. Rinse the rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot. Bring it to a boil, then cover and reduce to a simmer for about 15 minutes.
2. Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and minced garlic, cooking until softened.
3. Stir in the mixed vegetables. Cook for another 5 minutes until they are tender. Season with salt and pepper.
4. Push the veggie mixture to one side of the pan. Crack the eggs into the empty side and scramble them until fully cooked.
5. Mix the scrambled eggs with the vegetables. Finally, add the cooked rice to the pan, stirring well. Drizzle with soy sauce before serving.
