Ingredients
– 1 cup of rice
– 2 cups of water
– 1 tablespoon of oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, diced
– 1 can (400g) of diced tomatoes
– 1 teaspoon of paprika
– 1 teaspoon of salt
– 1 can (400g) of black beans, rinsed and drained
Method
1. Begin by washing the rice under cold water until clear.
2. Heat the oil in a large pot over medium heat, then add the chopped onion and garlic. Cook until softened.
3. Stir in the diced bell pepper and cook for another 3 minutes.
4. Add the rice, diced tomatoes, paprika, and salt. Pour in the water and bring to a boil.
5. Reduce the heat, cover, and let simmer for about 20 minutes or until the rice is tender. Lastly, mix in the black beans before serving.
