Ingredients
– 2 cups of quinoa
– 4 cups of vegetable broth
– 1 tablespoon of olive oil
– 1 onion, diced
– 2 garlic cloves, minced
– 1 red bell pepper, chopped
– 1 zucchini, diced
– 1 can (400g) of black beans, rinsed and drained
– 1 teaspoon of cumin
– 1 lime, juiced
Method
1. Rinse the quinoa under cold water. This removes the bitter coating.
2. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, cooking until soft.
3. Stir in the red bell pepper and zucchini. Cook for another 5 minutes until the vegetables are tender.
4. Add the quinoa, vegetable broth, black beans, and cumin. Bring to a boil, then reduce to a simmer.
5. Cover and cook for 15 minutes or until the quinoa is fluffy. Finish by stirring in the lime juice.
