Ingredients
– 1 cup quinoa
– 2 cups water
– 1 tablespoon olive oil
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 bell pepper, diced
– 1 can (400g) diced tomatoes
– 1 can (400g) black beans, rinsed and drained
– 1 teaspoon cumin
– Salt and pepper to taste
Method
1. Rinse the quinoa under cold water until it runs clear.
2. In a pot, combine quinoa and water. Bring to a boil, then cover and reduce heat. Let it simmer for about 15 minutes until the quinoa is tender.
3. While the quinoa cooks, heat olive oil in a large pan over medium heat. Add chopped onion and sauté until it becomes translucent, around 5 minutes.
4. Stir in minced garlic and diced bell pepper. Cook for another 3 minutes, then add diced tomatoes, black beans, cumin, salt, and pepper. Cook everything together for about 10 minutes.
5. Once the quinoa is ready, fluff it with a fork and mix it with the bean and vegetable mixture. Serve warm.
