Ingredients
– 1 cup of quinoa
– 2 cups of vegetable broth
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, diced
– 1 zucchini, chopped
– 1 teaspoon of dried oregano
– Salt and pepper to taste
– Fresh parsley for garnish
Method
1. Rinse the quinoa under cold water in a fine sieve.
2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until soft.
3. Stir in the bell pepper and zucchini, cooking for another 5 minutes until they soften.
4. Add the rinsed quinoa, vegetable broth, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and cover.
5. Simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed. Garnish with fresh parsley before serving.
