Ingredients
– 300 g chicken breast, diced
– 1 cup broccoli florets
– 1 cup diced carrots
– 1 onion, chopped
– 2 cloves garlic, minced
– 2 cups vegetable broth
– 1 cup milk
– 2 tablespoons olive oil
– 2 teaspoons dried thyme
– Salt and pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until they are soft.
3. Stir in the diced chicken and cook until it’s browned.
4. Add broccoli, carrots, broth, milk, thyme, salt, and pepper. Bring the mixture to a boil.
5. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
