Ingredients
– 1 cup quinoa
– 2 cups vegetable broth
– 1 can chickpeas, rinsed
– 1 red bell pepper, diced
– 1 cup cherry tomatoes, halved
– 1 cucumber, chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– Salt and pepper to taste
Method
1. Rinse the quinoa under cold water until the water runs clear.
2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
3. While the quinoa cooks, prepare the vegetables by chopping the bell pepper, cucumber, and halving the cherry tomatoes.
4. In a large bowl, combine the cooked quinoa, chickpeas, chopped vegetables, parsley, olive oil, lemon juice, and season with salt and pepper.
5. Toss everything together until mixed well. Serve it fresh or chill it in the fridge before eating.
