Ingredients
– 500g chicken breast, diced
– 1 cup broccoli florets
– 1 cup bell peppers, chopped
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 cup rice
– 2 cups chicken broth
– 1 teaspoon soy sauce
– 1 teaspoon salt
Method
1. Heat olive oil in a large pan over medium heat.
2. Sauté the onion and garlic until the onion is transparent.
3. Add the diced chicken and cook until browned.
4. Stir in broccoli, bell peppers, rice, chicken broth, soy sauce, and salt.
5. Cover the pan and let it simmer on low for about 20 minutes until rice is cooked.
