Ingredients
– 2 cups cooked rice
– 1 cup cooked chicken, shredded
– 1 cup mixed vegetables (frozen or fresh)
– 2 tablespoons soy sauce
– 1 tablespoon olive oil
– 1 teaspoon garlic, minced
– 1 teaspoon ginger, minced
– 2 eggs
– 1 tablespoon spring onion, chopped
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the garlic and ginger, cooking for about 1 minute until fragrant.
3. Stir in the mixed vegetables and cook for about 3-4 minutes until tender.
4. Push the vegetables to one side of the pan, and crack the eggs in, scrambling them until cooked.
5. Mix in the cooked rice, chicken, soy sauce, and season with salt, pepper, and spring onion. Cook until heated through.
