Ingredients
– 1 cup of quinoa
– 2 cups of water
– 1 can (400 g) of black beans, drained and rinsed
– 1 cup of corn, fresh or frozen
– 1 red bell pepper, diced
– 1 avocado, diced
– 1 lime, juiced
– 2 tablespoons of olive oil
– Salt to taste
– Pepper to taste
Method
1. Rinse quinoa under cold water.
2. In a medium saucepan, combine quinoa and water. Bring to a boil.
3. Reduce heat, cover, and let it simmer for about 15 minutes. Once cooked, fluff with a fork.
4. In a large bowl, mix together the cooked quinoa, black beans, corn, red bell pepper, and avocado.
5. Drizzle with lime juice and olive oil. Add salt and pepper to taste, then serve.
