Ingredients
– 2 cups of gluten-free flour

– Icing sugar (for dusting)
Method
1. Preheat the oven to 180°C and grease a cake pan.
2. Combine gluten-free flour, sugar, baking powder, and salt in a large bowl.
3. In another bowl, whisk together eggs, almond milk, vegetable oil, and vanilla extract.
4. Mix the wet ingredients into the dry ingredients until smooth. Fold in the mixed berries gently.
5. Pour the mixture into the prepared cake pan and bake for 30-35 minutes. Allow to cool, then dust with icing sugar before serving.
