Ingredients
– 1 cup of sliced mushrooms
– 1 medium aubergine, diced
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 400 g canned diced tomatoes
– 1 tablespoon of tomato paste
– 1 teaspoon of dried oregano
– 1 teaspoon of salt
– 400 g spaghetti or pasta of choice
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and sauté until soft.
3. Stir in minced garlic, diced aubergine, and sliced mushrooms. Cook for about 5 minutes.
4. Pour in the canned tomatoes and add tomato paste, oregano, and salt. Let it simmer for 15 minutes.
5. Boil pasta according to package instructions. Serve the sauce over pasta and enjoy.
