Mom’s Classic Pot Roast Recipe: Tender & Flavorful Comfort Food

Ingredients

– 1 kg beef chuck roast
– 2 tablespoons vegetable oil
– 250 ml beef broth
– 2 medium onions, chopped
– 2 carrots, chopped
– 2 stalks celery, chopped
– 2 cloves garlic, minced
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 teaspoon dried thyme

Method

1. Heat vegetable oil in a large pot over medium-high heat.
2. Brown the beef roast on all sides, which should take about 5 minutes.
3. Add chopped onions, carrots, celery, and minced garlic. Stir for 2-3 minutes.
4. Pour beef broth into the pot along with the salt, pepper, and thyme.
5. Cover and simmer on low heat for 3 to 4 hours until the meat is tender.
