Ingredients
1 cup white rice
2 cups water
1 tablespoon olive oil
1 teaspoon salt
1 clove garlic, minced
1 small onion, chopped
1 carrot, diced
1 green bell pepper, chopped
1 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Method
1. Rinse the rice in a fine mesh strainer under cold water until the water runs clear.
2. In a medium saucepan, combine water, rice, olive oil, and salt. Bring to a boil over high heat.
3. When the mixture boils, reduce the heat to low and cover the pan. Allow the rice to simmer for about 15 minutes.
4. Once the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes.
5. Fluff the rice with a fork, then stir in the garlic, onion, carrot, bell pepper, black pepper, and parsley.
