Ingredients
500 g beef tenderloin
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 small red onion, finely chopped
1 small gherkin, finely chopped
1 tablespoon capers, rinsed and chopped
1 egg yolk
Salt to taste
Black pepper to taste
Method
1. Start by chopping the beef into very small cubes. Aim for even pieces to ensure nice texture.
2. In a bowl, mix the beef with the mustard, Worcestershire sauce, and olive oil. Stir until everything is well combined.
3. Add the red onion, gherkin, and capers. Combine all the ingredients thoroughly.
4. Carefully place the egg yolk on top of the mixture. Season with salt and black pepper to taste.
5. Serve immediately on chilled plates with toasted bread or crackers on the side.
