Ingredients

4 medium beets

1 large onion

Method

1. Preheat the oven to 200°C. Wash the beets thoroughly and trim off the stems and roots.
2. Cut the onion into wedges and place it on a baking tray along with the beets.
3. Drizzle olive oil over the vegetables and season them with salt and pepper.
4. Wrap each beet individually in foil and place on the baking tray. Roast for about 45-60 minutes until the beets are tender.
5. Once cooked, let them cool, peel the skins off, chop the beets, and mix with balsamic vinegar, thyme, garlic, and honey. Top with feta cheese before serving.
