Ingredients
- 400 g spaghetti
- 100 g pecorino cheese, finely grated
- 50 g parmesan cheese, finely grated
- 2 tbsp black pepper, coarsely ground
- 60 ml pasta cooking water
- Salt, for seasoning
- 1 tbsp olive oil (optional)
- Chopped parsley (for garnish, optional)
Method
- Bring a large pot of water to a boil and add salt.
- Add spaghetti to the boiling water and cook until al dente, following package instructions.
- While pasta cooks, mix pecorino and parmesan cheese in a bowl with the black pepper.
- Once pasta is ready, reserve 60 ml of cooking water, then drain the spaghetti.
- Combine hot pasta with the cheese mixture and reserved water. Stir until creamy. If using, add olive oil and garnish with parsley.
