Ingredients
– 4 thick-cut New York strip steaks (about 2.5 cm thick)
– 1 tablespoon salt
– 1 tablespoon pepper
– 30 ml olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried rosemary
– 1 teaspoon dried thyme
– 250 ml beef broth
– 30 ml butter
– Fresh parsley for garnish
Method
1. Begin by taking the steaks out of the fridge and letting them sit at room temperature for about 30 minutes.
2. Mix salt, pepper, olive oil, garlic, rosemary, and thyme in a bowl. Rub this mixture all over the steaks.
3. Heat a grill or barbecue on high. Sear the steaks for around 4-5 minutes on each side until they have a nice brown crust.
4. Move the steaks to a cooler part of the grill. Pour the beef broth around the steaks and cover them. Cook for an additional 10-15 minutes or until they reach your desired doneness.
5. Remove the steaks and let them rest for about 5 minutes. Top with butter and chopped parsley before serving.
