Ingredients
– 1 cup red lentils
– 2 cups water
– 1 tablespoon coconut oil

– 1 onion, chopped
– 2 green chilies, slit
– 1 teaspoon turmeric powder
– 1 cup grated coconut
– 1 teaspoon tamarind paste
– Salt to taste
Method
1. Rinse the red lentils under cold water until the water runs clear.
2. In a pot, combine lentils and water. Bring it to a boil, then reduce heat and let it simmer until soft.
3. Heat coconut oil in a pan over medium heat. Add mustard seeds and wait until they start to pop.
4. Stir in the onion and green chilies. Cook until the onion becomes translucent. Add turmeric powder and mix well.
5. Add grated coconut, cooked lentils, tamarind paste, and salt. Stir everything together, and let it cook for a few minutes.
