Method
1. Start by heating the olive oil in a large skillet over medium heat.
2. Add the chicken thighs, seasoning them with salt and pepper. Cook for 5 minutes on each side until golden brown.
3. Stir in the minced garlic, then pour in the limoncello, chicken stock, lemon juice, and zest.
4. Sprinkle dried oregano in the skillet. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 25 minutes.
5. Once the chicken is fully cooked, serve it garnished with fresh parsley.
