Lemon Garlic Chicken with Tomatoes
Ingredients
4 chicken breasts
60 ml olive oil
4 cloves garlic, minced
1 lemon, juiced
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried oregano
2 cups cherry tomatoes
½ cup fresh parsley, chopped
Method
1. Preheat the oven to 200°C (400°F).
2. In a large bowl, mix the olive oil, minced garlic, lemon juice, salt, pepper, and oregano.
3. Add the chicken breasts to the bowl and coat them well with the marinade.
4. Place the marinated chicken in a baking dish. Scatter the cherry tomatoes around the chicken.
5. Bake for about 25-30 minutes until the chicken is cooked through and the tomatoes start to burst. Sprinkle chopped parsley on top before serving.
