Ingredients
– 300 g pasta (any type you like)
– 250 g mushrooms, sliced
– 2 cloves garlic, minced
– 60 g butter
– 60 ml lemon juice
– 60 ml chicken or vegetable broth
– 1 tsp salt
– 1 tsp black pepper
– 30 g fresh parsley, chopped
– 30 g grated cheese (optional)
Method
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. Melt the butter in a large skillet over medium heat. Add the sliced mushrooms and cook until they soften.
3. Stir in the minced garlic and cook for about 1 minute until fragrant.
4. Pour the lemon juice and broth into the skillet. Add salt and pepper, then bring to a simmer.
5. Toss the cooked pasta into the skillet. Mix in the parsley and cheese if using. Serve warm.
