Ingredients
– 2 cups of flour
– 1 cup of sugar
– 1/2 cup of butter, softened
– 2 large eggs
– 1 cup of milk
– 2 teaspoons of baking powder
– 1 teaspoon of vanilla extract
– 1/2 teaspoon of salt
– 1 cup of mixed berries
– Icing sugar (for dusting)
Method
1. Preheat the oven to 180°C (350°F). Grease a baking dish or line it with baking paper.
2. In a large bowl, mix the flour, baking powder, and salt together.
3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir in vanilla extract and gently fold in the mixed berries.
5. Pour the batter into the prepared dish. Bake for 30 to 35 minutes or until golden and a toothpick comes out clean. Dust with icing sugar before serving.
