Ingredients
2 medium bitter gourds, sliced
2 medium potatoes, diced
2 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 onion, chopped
2 garlic cloves, minced
1 teaspoon turmeric powder
1 teaspoon chili powder
Salt to taste
Method
1. Heat the vegetable oil in a large pan over medium heat.
2. When hot, add the mustard seeds and cumin seeds. Wait for them to splutter.
3. Next, add the chopped onion and garlic. Sauté until the onion turns golden brown.
4. Stir in the sliced bitter gourd and diced potatoes. Add turmeric powder, chili powder, and salt. Mix well.
5. Cover the pan and let it cook on low heat for 20 minutes, stirring occasionally until the vegetables are tender.
