Konkani Koddel Recipe: Mangalore Cucumber In Coconut Curry

Ingredients

– 1 medium-sized Mangalore cucumber (or similar)
– 1 cup grated coconut
– 2 green chilies
– 1 teaspoon mustard seeds
– 1/2 teaspoon turmeric powder
– 1 teaspoon salt (to taste)
– 1 tablespoon cooking oil
– 1 cup water
– 1 tablespoon lime juice
– Fresh coriander for garnish

Method

1. Begin by cutting the Mangalore cucumber into small pieces.
2. Place the chopped cucumber, grated coconut, green chilies, turmeric, and salt into a blender with 1 cup of water. Blend until smooth.
3. Heat the oil in a pot and add mustard seeds. Wait for them to crackle.
4. Pour the blended mixture into the pot, stirring it well. Cook on low heat for about 10 minutes.
5. After cooking, remove from heat and add lime juice. Garnish with fresh coriander before serving.
