Ingredients
– 1 can (400g) white beans, drained and rinsed
– 1 small garlic clove, minced
– 1/4 cup (60ml) fresh lemon juice
– 1/4 cup (60ml) extra virgin olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/3 cup (50g) Kalamata olives, pitted and chopped
– 2 tablespoons fresh parsley, chopped
– 1 teaspoon dried oregano
– 1/4 teaspoon red pepper flakes
Method
1. Start by placing the white beans, garlic, lemon juice, olive oil, salt, and black pepper in a blender or food processor.
2. Blend the mixture until it’s smooth. You can add a little water if needed to reach your desired consistency.
3. Next, stir in the chopped olives, parsley, oregano, and red pepper flakes.
4. Transfer the dip into a serving bowl and let it sit for a few minutes to allow the flavors to blend together.
5. Serve the dip with pita chips or fresh veggies for dipping.
