Ingredients
– 500 g chicken breast, diced
– 2 tbsp olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 red bell pepper, diced
– 1 zucchini, sliced
– 400 g canned tomatoes
– 1 tsp dried oregano
– 1 tsp salt
– 1/2 tsp black pepper
Method
1. Heat olive oil in a large pan over medium heat.
2. Add onion and garlic, cooking until softened.
3. Toss in bell pepper and zucchini, then fry for another 5 minutes.
4. Stir in diced chicken, salt, pepper, oregano, and cook until chicken is no longer pink.
5. Pour in canned tomatoes and simmer for 10 minutes, stirring occasionally.
