Ingredients

– 2 cups of cooked rice
– 1 tablespoon of oil
– 1 diced onion
– 2 cloves of minced garlic
– 1 cup of mixed vegetables
– 1 cup of cooked chicken, shredded
– 2 tablespoons of soy sauce
– 1 teaspoon of ground pepper
– 2 eggs
– 2 green onions, sliced

Method

1. Heat the oil in a large pan over medium heat.
2. Add the onion and garlic, stirring until they are soft.
3. Mix in the vegetables and cooked chicken, cooking for another 5 minutes.
4. Push the mixture to one side of the pan, then crack the eggs into the empty side, scrambling them until cooked.
5. Combine everything in the pan, then add the rice, soy sauce, and pepper, cooking for an additional 2 minutes.
