Ingredients

– 4 medium potatoes, diced
– 1 cup of green beans, trimmed and cut
– 2 carrots, sliced
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 can (400 g) of diced tomatoes
– 1 tsp of dried Italian herbs
– 500 ml of vegetable broth
– Salt, to taste
– Pepper, to taste

Method

1. Heat a large pot over medium heat. Add chopped onion and garlic, cooking until soft and fragrant.
2. Add diced potatoes, sliced carrots, and green beans into the pot. Stir and cook for about 5 minutes.
3. Pour in the diced tomatoes and vegetable broth. Sprinkle in the Italian herbs, salt, and pepper.
4. Bring the mixture to a boil. Once boiling, reduce the heat and simmer for 20 minutes until vegetables are tender.
5. Taste the stew and adjust seasoning if needed. Serve hot in bowls and enjoy.
