Ingredients

– 1 cup quinoa
– 2 cups vegetable broth
– 1 can (400 g) black beans, rinsed and drained
– 1 cup corn kernels (fresh or frozen)
– 1 red bell pepper, chopped
– 1 avocado, diced
– 1 lime, juiced
– ¼ cup fresh cilantro, chopped
– 1 tsp cumin
– Salt and pepper to taste

Method

1. Rinse the quinoa under cold water.
2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat. Cover and simmer for about 15 minutes or until the quinoa is cooked.
3. Take off the heat and let the quinoa cool for a few minutes.
4. In a large bowl, mix the black beans, corn, red bell pepper, avocado, lime juice, cilantro, and cumin.
5. Stir in the cooked quinoa. Season with salt and pepper to taste.
