Italian Broccoli And Cauliflower Soup Recipe: Creamy & Delicious

Ingredients

– 1 medium onion, chopped
– 2 cloves garlic, minced
– 4 cups broccoli florets
– 4 cups cauliflower florets
– 6 cups vegetable broth
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– Salt to taste
– Pepper to taste
– ½ cup cream

Method

1. Heat a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes soft.
2. Toss in the broccoli and cauliflower. Stir the veggies for a few minutes.
3. Pour in the vegetable broth, then add the oregano, thyme, and season with salt and pepper. Bring the mixture to a boil.
4. Reduce the heat and let it simmer for about 20 minutes. The vegetables should be tender.
5. Blend the soup until smooth. Stir in the cream and serve hot.
