Ingredients
– 4 medium potatoes
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1 tablespoon chopped fresh parsley
– ½ cup grated cheese (optional)
– 2 cups vegetable broth
– 1 cup broccoli (fresh or frozen)
Method
1. Preheat the oven to 200°C (400°F).
2. Wash the potatoes thoroughly and cut them into wedges.
3. In a large bowl, combine olive oil, salt, pepper, garlic powder, and paprika.
4. Toss the potato wedges in the oil mixture until they are well coated.
5. Place the wedges on a baking tray and bake for about 25–30 minutes, turning halfway through.
