Ingredients

– 1 cup red lentils
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon ginger, grated
– 1 tablespoon curry powder
– 1 can (400g) diced tomatoes
– 4 cups vegetable broth
– 1 teaspoon salt
– 1 tablespoon cooking oil
– Fresh coriander, for garnish

Method

1. Start by turning on the Instant Pot and selecting the sauté function. Heat the cooking oil in the pot.
2. Add the chopped onion, garlic, and ginger. Cook until the onion becomes soft, stirring occasionally.
3. Mix in the curry powder and cook for another minute to release the flavors.
4. Pour in the diced tomatoes, red lentils, vegetable broth, and salt. Stir everything well.
5. Close the lid and set the Instant Pot to cook on high pressure for 15 minutes. After it finishes, let the pressure release naturally for 10 minutes before opening the lid.
